1 tablespoon red curry paste
1 can (14 oz) coconut milk
1 zucchini, sliced
1 red bell pepper, sliced

1/4 cup chopped basil, for garnish
Steamed quinoa, for serving

Directions:
1 - Heat the oil in a large pan over medium-high heat.
2 - Add the curry paste and cook for 1-2 minutes, until fragrant.
3 - Add the chicken and cook for 5-7 minutes, until browned.
